Moringa spiced Freekeh Rice

Moringa spiced Freekeh Rice Back to Recipes

Ingredients:

  • 150 g Freekeh rice
  • 1 Onion
  • 2 Red peppers
  • Mint leaves- handful
  • 2 tsp Ausha Moringa powder
  • 1 tsp Ausha turmeric powder
  • 40g Vegetable stock powder
  • 2 Garlic bulbs
  • 2 tsp Cooking oil or butter
  • ½ tin Coconut milk

Method:

Peel and chop the onion into small pieces. Chop the red peppers fine (discard the core and seeds). Pick the mint leaves and chop.

Heat a large saucepan and add two tsp butter, the onion and then garlic on medium heat.  Cook until soft for 5 mins. Add AUSHA turmeric powder and stir for one minute. Add red peppers and cook for three minutes. Stir in the mint leaves and freekeh rice. Add the boiling water and coconut milk in 50:50 ratio(150ml of water and 150 ml of coconut milk). Now add stock powder,Ausha Moringa Powder. Stir and bring it to the boil.  Cook for 15 mins. Remove the pan from the heat and leave it aside.Adjust the salt according to your taste.

Heat a pan and drizzle some oil. Coat each side of halloumi slice in some mango chutney, and cook until golden brown for about 2 minutes on each side.

Enjoy with a cup of hot Ausha Moringa Green Tea.

Note:You can also use Couscous or brown Rice instead of Freekeh rice.
